    Classically, zakat on crops is due at the point of production, while zakat on wealth applies after retention and surplus. Given that wages are neither storable produce nor surplus at the point of receipt, what is the principle for classifying salary under crop-based zakat rather than wealth-based zakat?

    As I understand service industry is production but nature of production is very different. Agricultural produce is objectively surplus, externalized (comes out of the land), is separable from the producer and does not represent subsistence itself. While salary is the means of subsistence itself, is not surplus by nature, is the price of survival and is consumed continuously to reproduce labor. How can we apply the same principle that is 10 percent on gross?

    It is a question to understand the application better.

    The characteristics of the produce do not alter its status as produce. Whether it is storable or not, or detached from the land or not, is irrelevant. It incurs zakat of production.

    Ok. One issue is that agricultural produce is zakated at harvest and the same produce is not included again in yearly wealth zakat, even if it is stored. In the salary-as-production model, however, salary is zakated at receipt (10%) and the remaining amount is again included in yearly wealth zakat (2.5%) if saved. Then there may be double obligation.

    The saved crops were for consumption, and the things for need are exempted from zakat. The same goes for the savings, which are for some need. However, if savings are more than your needs, they are subject to zakat.
