God created Adam (AS) from clay/mud. Why God needed a building material?
Then he created eve from Adam’s rib, why not mud/clay again?

God does not need anything, Qur’an makes that clear. It is a matter of choice. God choose to make a creation out of a material and so He did. Simple as that. Now you may argue why He didn’t just make human without material/time then the answer is that human are not by default special that they get special treatment when created. Compared to God and much of His other creations, humans are lowly creation, they need material to originate, the creation of human from material highlights their needs and dependency, not God’s.
As for the Eve part, Ghamidi Sahab view is different:

Quran has made it clear that Adam and Eve both belong to the same specie.
يَاأَيُّهَا النَّاسُ اتَّقُوا رَبَّكُمْ الَّذِي خَلَقَكُمْ مِنْ نَفْسٍ وَاحِدَةٍ وَخَلَقَ مِنْهَا زَوْجَهَا وَبَثَّ مِنْهُمَا رِجَالًا كَثِيرًا وَنِسَاءً وَاتَّقُوا اللَّهَ الَّذِي تَتَسَاءَلُونَ بِهِ وَالْأَرْحَامَ إِنَّ اللَّهَ كَانَ عَلَيْكُمْ رَقِيبًا
Mankind! Fear your Lord, Who created you from a single person, created, of like species his mate, and from these two scattered countless men and women [in this world], and fear Allah through whom you seek mutual help and fear breaking blood relationships. Indeed, God is watching over you. (Quran 4:1)
It is evident from the verse that Eve is of the same species as Adam. This further means that women are not inferior beings. As human beings, men and women are equal in status.
Now why did God choose a certain course of action as opposed to another, it is something beyond our sources of knowledge as a human being. In such matters, our knowledge solely depends on divine information and we are only given limited information in this regard. Please also refer to the videos provided in the following thread:
