When we watch someone dying Infront of us, it affects our feelings in a manner that is unexplainable. I don’t know how to describe that feeling (maybe terror) but the question is, is it something related to our psychology or is it because of spirits taking the soul?

A professional psychologist might be in a better position to answer such human emotions. But most probably it has to do with psychology of a person because of the ambience created at that time.
