The same way the crux of ibadah is khuzu and tazalul (if someone could give an accurate English translation for both words that would be appreciated), what is the crux of shirk?

Is it the rebellious attitude, or is it the arrogance, or is it the attribution of a lie unto God? Because 7:33 mentions shirk separately and saying unto God what you have no knowledge for separately.

I ask because if it’s arrogance then things like narcissism would fall under shirk

      4) Shirk – Associating partner(s) with Allah.

Polytheism, praying to a human being, a deceased person or any other creation of Allah etc. would come under this category.

      5) Wa an taqulu a’lallahi ma la ta’lamoon – To say about Allah of which we have no knowledge.

Bid’ah (innovation in religion) , declaring halaal as haraam and haraam as halaal without any evidence etc. would come under this category.

This makes it seem as though Shirk is inherently haraam because of the attribution of a partner- I get that this is a lie. Why is the fifth point restrained to simply bidah? Surely the fourth point is under the umbrella of the fifth point

5th point is not restrained to Bid’ah, its just “one” exmple that belongs to 5th point

So the 4th point comes under the 5th point right? is it just because shirk was more prevalent in those times?

It does but it has been explicitly called out.

is it because most cultures usually fall into this specific attribution of a lie?

that might be one reason, you are right
