Surah Nasar is last revealed surah according to various exegesis.

That doesn’t make sense. It’s making a prophecy about makkah being conquered. Ghamidi sahab also says it was revealed at end of makki period

Quran has been perpetually transmitted to us generation after generation through consensus of the entire ummah. As you already know this is called ijma and tawatur, which is the strongest means of transmission of any knowledge through time. Knowledge transmitted through this mode does not require any proofs. This is however a separate topic that we have discussed earlier in a lot of detail.

Once you have understood ijma and tawatur and have accepted the Quran on the basis of such strong evidence, then there’s no point in scrutinizing individual verses for accuracy. The only time one needs to re-assess is when any evidence is presented against anything in the Quran.

Does the ijma and tawattur extend to the point which can let us conclusively compare the dating of these two events? How do we know the verses themselves weren’t revealed after the defeat rather than being added later. That their actual time of revelation was after the conquering

There’s no need for any conclusive dating. The verses and their context is clear in what’s being communicated. If dating can be established through some other means, it would be something additional, however, it won’t add anything to the message.

Sorry I don’t understand. Surely if one of the proofs for the Quran being true is that prophecies come to fruition, then we should be able to proof that they were actually prophecies and that they preceded the even that they claim to predict

Quran doesn’t claim it’s truthfulness on the basis of prophecies.
