Suppose no hadees books were written and no ilm hadees existed, of course the Quarn would have been there, but without the ilm hadees or hadees content. It could have affected the way we practice/understand deen or not?

It won’t affect the contents of Deen. Deen is independent of Hadith. However, Hadith helps us understand and explain the things that otherwise we have to work to understand.
