Is it true that a hadith being sahih in fiqh is different from hadith being sahih in hadith science?
If true, please elaborate.

It is not.
The difference is in the acceptance. Sometime a faqih accepts a hadith which is mot shahih and rejects a sahih hadith for reasons.
Sahih means the hadith whose narrator are authentic. It doesn’t confirm that the narration is correct.
