Lots of belief systems consider the entire creation to be God. This is a common belief in Tassawuf, Hinduism, Mysticism, and Kabalah, to name a few. Also lots of atheists believe that God is a created concept. Similarly, in many traditions, e.g. some forms of Hinduism it is believed that God has helpers who run things on their own.

What is the difference between the concept of God’s helpers in Hinduism and angels in Islam?

Whether God has helpers or not and to what extend God has given them free will is nothing to do with the concept of shirk.
Shirk is something like you get salary from your employer but you work for someone else.

I think Faisal bhai meant that believing that the one true God does not have full control constitutes shirk as well

Don’t think Hindus believe that the helpers of God have power to go against God’s will. If that’s what they believe then i agree it’s a form of shirk.
