Is it permissible to call yourself by a different caste name than the one you were born with? If a person does this, are they committing a religious offense, and what does the religion say will happen to them as a result?

It is a lie and deception therefore it is strictly forbidden. The holy prophet is repeated to have said
سعد اور ابوبکرہ رضی اللہ عنہما کہتے ہیں کہ میرے کانوں نے سنا، اور میرے دل نے یاد رکھا کہ محمد صلی اللہ علیہ وسلم نے فرمایا: ”جو شخص اپنے آپ کو اپنے والد کے علاوہ کی طرف منسوب کرے، جب کہ وہ جانتا ہو کہ وہ اس کا والد نہیں ہے، تو ایسے شخص پر جنت حرام ہے“۔ [سنن ابن ماجه/كتاب الحدود/حدیث: 2610]
