Eg in the Quran 52:35 we find God arguing that the Qurayshis lack conviction that God can resurrect them and bring about the hereafter – their incoherent reasoning is stated.

Can we also extrapolate this specific as a an argument for the existence of God?

    Your question is not clear.

The Quran in that ayah is showing how the Qurayshis have no coherent belief- the believe Allah is the creator but don’t believe he can bring resurrection.

But some people use this ayah to argue for the existence of a creator- is this appropriate to do?

The ayah is in fact arguing for the existence of a Creator.

      52:35 – Translation by Asad

[Or do they deny the existence of God?] Have they themselves been created without anything [that might have caused their creation]? or were they, perchance, their own creators?

But the addressees of the Quran all believed in a creator so what is the purpose of this ayah?

I think that’s the point that the Quran is trying to address. The addressees of theses verses do not really believe in their hearts because they don’t want to.
