Why Quran and Hadice did not mention monotheist religion Zoroastrianism practiced by a super power of the time Persia ? Also that religion almost vanished after Islam while it seems Quran had some leeway for Christianity and Judaism. Not sure how many Persian scholars contributed in the early Islamic literature and was there any influence of Zoroastrianism as a result ?

During the time of Abbassids, there were many persian scholars who contributed in Islamic literature.

There are certain ahadith which mentioned about Zoroastrianism. For example see https://sunnah.com/urn/737860

About why no mention of other religion. You may find following link and video helpful
