Asalamualaikum,
If my eyes were to fall onto a word while I was praying and my mind put the letters together subconsciously to construct a word, would my salah be broken?

No, Salah would not be invalid and one should concentrate back on his/her Salah as soon as one realizes this fact. However, it is advised to offer salah in a place with minimal to no distractions; that is why offering Salah in a mosque in highly recommended.
