I understand the nuances in calling someone a kaafir.
However what is the simple answer to this question: are the Christians monotheists?
We know they commit shirk.

Their belief in the trinity is not monotheism. God has declined to accept their interpretation or philosophy. So we consider the one holding this belief, not a monotheist. However, they think it is not against monotheism.

Christians are not monotheists according to Quran’s definition of monotheism. However, Trinitarian Christians insist that God the Father, God the Son, and God the Holy Spirit share the same single essence, hence their belief is monotheistic. We can only discuss their misconception with them, point out their error, and discuss why their concept is polytheistic, however, we do not call them kafir or mushrik.
