Human rights in Islam emanate from basic ethics which are described in Quran as:
إِنَّ اللّهَ يَأْمُرُ بِالْعَدْلِ وَالإِحْسَانِ وَإِيتَاء ذِي الْقُرْبَى وَيَنْهَى عَنِ الْفَحْشَاء وَالْمُنكَرِ وَالْبَغْيِ يَعِظُكُمْ لَعَلَّكُمْ تَذَكَّرُونَ
God enjoins you to justice, goodness and spending on the kindred, and forbids lewdness, evil and arrogance. He admonishes you so that you may take heed. (Quran 16:90) (Further Details: Discussion 37166)
Evil and Arrogance, against humans can take following forms, which are declared prohibited in Quran:
قُلْ إِنَّـمَا حَرَّمَ رَبِّيَ الْفَوَاحِشَ مَا ظَهَرَ مِنْهَا وَمَا بَطَنَ وَالإِثْمَ وَالْبَغْيَ بِغَيْرِ الْـحَقِّ وَأَن تُشْرِكُوْا بِاللّهِ مَا لَـمْ يُنَزِّلْ بِهِ سُلْطَانًا وَأَن تَقُولُوْا عَلَى اللّهِ مَا لاَ تَعْلَمُوْنَ
Tell [them]: “My Lord has only forbidden all lewd acts, whether overt or hidden and usurping the rights of others and wrongful oppression and that you worship with Him what He did not sanction and that you fabricate something about God what you know not.” (Quran 7:33)
AND
يَاأَيُّهَا الَّذِينَ آمَنُوا لَا تَأْكُلُوا أَمْوَالَكُمْ بَيْنَكُمْ بِالْبَاطِلِ إِلَّا أَنْ تَكُونَ تِجَارَةً عَنْ تَرَاضٍ مِنْكُمْ
Believers! Do not devour one another’s wealth by wrongful means except through trading by mutual consent. (Quran 4:29)
At the end, it was all summarized by Prophet Muhammad (sws) in his last sermon of Hajj:
إِنَّ وَدِمَاءَكُمْ وَأَمْوَالَكُمْ وَأَعْرَاضَكُمْ بَيْنَكُمْ حَرَامٌ كَحُرْمَةِ يَوْمِكُمْ هَذَا فِي شَهْرِكُمْ هَذَا فِي بَلَدِكُمْ هَذَا
Indeed, your lives, your wealth, and your honour are as sacred and inviolable as this day of [sacrifice of] yours in this city of [Makkah of] yours in this month of [Dhual-Hajj of] yours. (Bukhari: https://sunnah.com/bukhari:67)
