For Jews, it was a practice of Qasamah which is taking oath on a sacred thing. You can compare with us if we take oath on Quran or in Masjid; a muslim won’t dear to lie in this time. Further details you can read in Surah Baqra and the reason it became red and heifer is Jews have no real intent to do it and they were trying to escape from it.
