The punishment depends on the conditions. The judge will decide after taking evidence in account.

The question really is not about evidence. The question relates to compounding of theft. Is it possible ? Like we can compound murder . Can we compound theft also and if yes is there any particular stage or it can be compounded even after the judgment

Quran only mentions compounding only in case of unintentional killing. This cannot be extended to intended murder.
In case of theft there is a room for forgiving theft in lieu of the actual value returned even before going to court as per my understanding.
