As far as Dietary prohibitions are concerned, they work on the principle of Taiyyabaat and Khabaais as mentioned in Quran (See: Discussion 47843 • Reply 47886). Since Alcohol belongs to this category of Khabais because it deprives one of their consciousness thus rendering the human intellect completely ineffective, therefore it is prohibited (Please also see: Discussion 33165).
